Soft Pretzel Tutorial

Ingredients

  • 1 1/2 cups warm water
  • 2 1/4 teaspoon active dry yeast (1 standard packet)
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 tablespoon melted butter
  • 4 cups flour
  • Flakey sea salt for topping

Baking Soda Bath:

  • 1/2 cup baking soda
  • 9 cups water

Preheat the oven to 400°F. Combine the warm water and yeast and set aside. Stir occasionally. The mixture should foam and develop a yeasty smell within 10 minutes.

In a large bowl, add the flour and salt. Stir to combine.

In a separate bowl, combine the melted butter and brown sugar. Once cooled, combine the butter and brown sugar mixture with the yeast mixture.

Add the wet mixture to the flour and stir until a sticky dough forms. Turn out the dough onto a floured surface and knead for 5 minutes (or until the dough springs back when pressed). Place the dough in a mixing bowl and cover with a towel. Allow the dough to rise for ten minutes.

Bring 9 cups of water to a boil in a large pot on the stove. Once boiling, add the baking soda to create a baking soda bath.

Pinch off a fist-sized ball of dough from the risen mass. Roll the dough into an 18-20 inch long log and twist it into a pretzel shape. (Or any shape you want!)

Place the pretzel twist into the baking soda bath for 20-30 seconds. This will allow the pretzel to puff up before baking in the oven. Do not leave your pretzel in for too long, or it will taste metallic due to the baking soda.

Place the bathed pretzel on a baking sheet and top with flakey salt. Bake for 12-15 min or until golden brown.
